Description
Delight in these spiced, festive Christmas crinkle cookies, coated in powdered sugar for a snowy touch. Perfect for gifting or enjoying with loved ones!
Ingredients
100g caster sugar (3½oz)
100g soft light brown sugar (3½oz)
60g cocoa powder (2¼oz)
75ml vegetable oil (2½ fl oz)
2free-range eggs
200g plain flour (7oz)
Pinch of salt
1tsp baking powder
1tsp ground cinnamon
1tsp ground ginger
40g icing sugar (1½oz)

Prepare the Oven:Preheat the oven to 180°C (160°C Fan) or Gas Mark 4. Line a baking tray with parchment paper.

Mix Wet Ingredients:In a large bowl, whisk together the caster sugar, light brown sugar, cocoa powder, vegetable oil, and eggs until smooth and well combined.

Combine Dry Ingredients:In a separate bowl, sift together the flour, salt, baking powder, cinnamon, and ginger. Gradually fold the dry mixture into the wet ingredients to form a soft dough.

Shape the Cookies:Roll the dough into balls weighing approximately 40g (1½oz) each (golf ball-sized). Flatten slightly into thick discs if you prefer a crinkle cookie that spreads more, or leave as round balls for a puffier texture.

Coat in Icing Sugar:Place the icing sugar in a small bowl. Roll each cookie ball in the icing sugar, ensuring they are generously coated.

Bake the Cookies:Arrange the coated cookies on the prepared baking tray, spacing them about 3 fingers apart to allow for spreading. Bake for approximately 16 minutes, or until the cookies have risen and developed their signature crinkled appearance.

Cool and Serve:Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack.
