Prepare the Scallops:

- Remove and discard the tough white muscle from each scallop, if present.
- Pat the scallops dry with kitchen paper and set aside.

Make the Sauce:

- In a medium pan, melt the butter over low heat. Stir in the flour and cook for about 30 seconds, stirring constantly.
- Remove the pan from the heat and slowly whisk in the white wine, followed by the fish stock, ensuring a smooth consistency.
- Return the pan to the heat and cook, stirring, until the sauce thickens and bubbles.
- Take the pan off the heat again and stir in the cream and egg yolks. Season to taste and set aside.

- In a small bowl, combine the breadcrumbs, melted butter, thyme leaves, and lemon zest. Season lightly with salt and pepper.
