Instructions

  1. Prepare Your Ingredients
Gather everything you need to make this delicious holiday drink.
  2. Infuse the Milk
In a saucepan, combine the milk, cinnamon, ½ teaspoon of vanilla extract, and cloves. Set the heat to low and warm the mixture for 5 minutes, stirring occasionally. Gradually increase the heat to medium-low and bring the mixture to a gentle boil. Once it starts boiling, remove it from the heat.
  3. Whisk the Egg Yolks
In a large mixing bowl, whisk the egg yolks until they are pale and smooth. Add the sugar and continue whisking until the mixture is light and fluffy.
  4. Temper the Eggs
Slowly pour a small amount of the warm milk into the egg yolk mixture while whisking briskly. This step prevents the eggs from scrambling. Gradually add the rest of the milk while whisking until fully incorporated.
  5. Cook to Thicken
Pour the combined mixture back into the saucepan. Heat it over medium heat, stirring constantly, until the mixture thickens (about 3 minutes). Be careful not to let it boil, as this can cause curdling.
  6. Cool and Flavor
Strain the mixture to remove the cloves, then let it cool for about an hour. Once cooled, stir in the cream, the remaining 2 teaspoons of vanilla extract, nutmeg, and rum (if using).
  7. Chill and Serve
Transfer the eggnog to the refrigerator and let it chill for at least 8 hours or overnight for the best flavor. Serve cold, and garnish with a sprinkle of nutmeg for an extra festive touch.
