Infuse the Milk
In a saucepan, combine the milk, cinnamon, ½ teaspoon of vanilla extract, and cloves. Set the heat to low and warm the mixture for 5 minutes, stirring occasionally. Gradually increase the heat to medium-low and bring the mixture to a gentle boil. Once it starts boiling, remove it from the heat. -
Whisk the Egg Yolks
In a large mixing bowl, whisk the egg yolks until they are pale and smooth. Add the sugar and continue whisking until the mixture is light and fluffy. -
Temper the Eggs
Slowly pour a small amount of the warm milk into the egg yolk mixture while whisking briskly. This step prevents the eggs from scrambling. Gradually add the rest of the milk while whisking until fully incorporated. -
