Cook to ThickenPour the combined mixture back into the saucepan. Heat it over medium heat, stirring constantly, until the mixture thickens (about 3 minutes). Be careful not to let it boil, as this can cause curdling.
6 Cool and FlavorStrain the mixture to remove the cloves, then let it cool for about an hour. Once cooled, stir in the cream, the remaining 2 teaspoons of vanilla extract, nutmeg, and rum (if using).
7 Chill and ServeTransfer the eggnog to the refrigerator and let it chill for at least 8 hours or overnight for the best flavor. Serve cold, and garnish with a sprinkle of nutmeg for an extra festive touch.
