Instructions

  1. Prepare the Dough:

Preheat your oven to 400°F (200°C).In a large bowl, sift together the flour, ¼ cup confectioners' sugar, and cinnamon.

Add the butter and blend using a pastry cutter or two forks until the mixture resembles fine crumbs.

Stir in the orange zest, then gradually add the ice water, mixing until the dough comes together in a ball.

  1. Shape the Pastries:

On a lightly floured surface, roll out the dough to about ¼ inch thickness.

Use a 3-inch round cutter to create bases and a 2-inch cutter for the tops, re-rolling scraps as needed.

Press the larger circles into muffin tins or mini tart pans to form the base of each pie.

    •

  1. Fill and Assemble:

Spoon about 1 tablespoon of mincemeat filling into each pastry base.

Place the smaller dough circles over the filling, gently pressing the edges to seal.

Brush the tops with beaten egg for a golden finish.

  1. Bake to Perfection:

Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown.

Remove from the oven and allow the pies to cool slightly on a wire rack.

  1. Finish and Serve:

Dust the cooled pies with the remaining ¼ cup confectioners' sugar for a festive touch.
