Ingredients

Instructions

  1. Prepare the Sausage: Remove the sausages from their casings by squeezing the meat out in small chunks. Add these to a large, deep pan, such as a non-stick frying pan or casserole dish.
  2. Cook the Sausage and Onion: Heat 1 tablespoon of oil in the pan and brown the sausage pieces over high heat, stirring frequently for about 3 minutes. Add the remaining oil along with the chopped onion and continue cooking for another 3 minutes, until the sausage is browned and the onion has softened.
  3. Add the Sauce and Pasta: Pour in the chopped tomatoes, 700ml of water, the pasta, ketchup, and dried herbs. Stir well to combine. Cover the pan with a lid, bring everything to a simmer, then reduce the heat to low. Cook for 15 minutes, stirring occasionally to prevent the pasta from sticking, until the pasta is cooked and the sauce has thickened.
  4. Cook the Broccoli: While the pasta cooks, place the broccoli in a microwave-safe dish with 3 tablespoons of water. Cover and microwave on high for 5-7 minutes, stirring halfway through. Alternatively, you can boil the broccoli in water on the stove until tender.
  5. Serve: Season the pasta with salt and pepper to taste, and serve with the cooked broccoli on the side.
  1. Tips
    • Feel free to use any type of sausage or sausagemeat you have on hand.
    • Tomato purée can be used instead of ketchup if you prefer a less sweet sauce.
    • If you don’t have a large enough pan, cook the pasta separately and serve the sausage sauce over it. In this case, reduce the water and shorten the cooking time for the sauce to about 10 minutes.
