Prepare the Pasta:
On a clean surface, combine the flour and salt. Create a well in the center, crack in the eggs and egg yolks, and mix gradually. Knead until smooth, cover, and let rest for 30 minutes. Roll out using a pasta machine and cut into desired shapes. Dust with semolina to prevent sticking. -
Cook the Seafood:
Heat a little olive oil in a pan. Season the prawns, salmon, and squid with salt and pepper. Cook each in batches until lightly golden and just cooked through. Set aside. -
Make the Sauce:
In the same pan, heat olive oil and sauté the onion until soft. Add the curry powder and cook for another minute. Pour in the white wine and reduce by half. Add the fish stock and simmer until reduced again. Stir in the double cream and cook until the sauce thickens. Season with salt and pepper. -
Assemble the Dish:
Toss the cooked pasta in the sauce and add the seafood. Mix gently until well-coated. -
Serve:
Garnish with freshly chopped parsley and serve immediately.
